Safres is a wine issued from vineyards planted on fine maritime sands without rocks and with traces of limestone. Fresh, powerful nose, this wine has elegant floral and fruity notes, complemented with a mineral palate and polished tannins.

VINEYARD FEATURES
The grapes used for this wine originate from the most prestigious vineyard regions within the Chianti appellation, standing at elevations between 200-350 meters. The soil is characterized by the presence of galestro.
A classical Cabernet Sauvignon with a deep purple color and garnet hues. It has a black cherry and plum nose with liquorice, cassis and toasty oak notes. The wine is full bodied with integrated tanning smooth tannins.
Jordan is a cold country with a hot sun. Ample differences in day and night temperatures are responsible for the unique taste of the wines. The Zumot family vineyards are framed organically and produce fruit with concentrated aromas because of this temperature difference. This Merlot grows in vineyards oriented East-West, unlike Europe’s southern exposure orientation. This orientation keeps the grape bunches aerated during growth and maturation, and allows Merlot to ripen. It is a harmonious wine, exquisitely balanced, velvety and long lasting.
Seemingly an unusual variety to grow in Jordan, Omar Zumot did not believe in the impossible and experimented with hard-to-grow varietals such as Pinot Noir. The results blew everyone away. The winds coming from the West made the Pinot Noir’s skin thicker and more resilient than its European counterparts.

A true Cabernet Sauvignon lover’s wine. Handpicked and organically grow, the Zumot family believes that wine is made in the vineyard by nature rather than in the cellar. The soil of the Sama Vineyard where the vines are planted contain clay, limestone and basalt; the residue of volcanic activity that is 50,000 years old! This noble variety has thrived in Jordan and produces a wine with ample fruit and length.

Character, structure and notes of menthol. These are just some of the characteristics of Graciano, a native variety of Rioja in Spain that is typically used for blending with Tempranillo in wines destined for aging. Although this is the most traditional incarnation of this grape, single-variety Graciano wines have garnered a cult following. They have demonstrated inherent characteristics that are sure to fascinate all wine lovers.
