Description
Dom Perignon is only released as a vintage champagne in years where the harvest has been exceptional. Each release is a creation that is singular, and unique and that expresses the character of the year and of Dom Perignon. After 8 years in the cellars, the champagne offers a harmonious balance.
Depending on the vintage the Pinot Noir in Dom Perignon champagnes usually dominates; presenting peach, raspberry, and dark cherry. The Chardonnay then adds a supportive layer that is chalky in texture and offers notes of pineapple, plum, and apple. This vintage release is made up of 51% Pinot Noir and 49% Chardonnay.
Nose & palate
The green of eucalyptus, mint and vetiver, the yellow-orange of mirabelle plums, apricot and orange blossom, the brown of pepper, cardamom and licorice sticks, and finally silvery saline and toasty hues.
The mouthfeel is elegant, expressing luxuriant simplicity and precision.
The refined and silky foundation becomes more pronounced at the heart.
The finish is dominated by a salinity that leaves a deep sensation of consistency.
